Cheese Scones

225g Self Raising Flour

55g Butter

25g Mature Cheddar Cheese (grated)

150ml Milk

Pinch of Salt

Preheat your oven to 220°C. Mix together your flour and salt and rub in the butter until you have a breadcrumb-ish texture. Stir in the cheese and then add your milk until you get a nice dough. Lightly flour your surface and start to knead you dough a little bit. Roll the dough out to roughly 2cm thick and cut out circles and place on a lined baking sheet. Reuse the leftover dough only once and cut out more circles. Rub a little milk on the tops of each scones and don’t be afraid to sprinkle a little more cheese or salt on top. Bake for 12-15 minutes until golden and risen. Don’t bother letting them cool, they’re eaten best warm with lashings of butter.
