130g Plain Flour (plus extra for dusting)
2 tsp Salt
55g Butter (cold and cubed)
200g Strong Cheddar Cheese (grated)
25g Parmesan Cheese (grated)
3-4 tbsp Cold Water
1 tsp Chili Flakes (optional)
Start by mixing together the flour, salt and chili flakes (if using) in a bowl. Add the cubed butter and rub into the flour until your mixture looks like breadcrumbs. Next mix in the cheeses and then the cold water a tablespoon at a time until the dough comes together. Wrap your dough up in cling film and pop it in the fridge for an hour or more.
Whilst your dough is chilling preheat your oven to 176°C. Once chilled roll out your dough on a lightly floured surface to about a 1/2 cm and cut out with a cutter of your choice. Line a baking sheet with baking paper and since they don’t expand you can cram as many on there as necessary. I like to sprinkle mine with a little extra cheese, salt and chili flakes for the extra flavour. Bake until golden and crunchy depending on the size about 20 minutes but make sure to keep your eye on them.
Allow to cool and then enjoy.
