Broken Glass Cupcakes

For these cupcakes, I used Red Velvet Cupcakes with Cream Cheese Frosting but it’s all about the broken glass they’re topped with.

175g Caster Sugar

180 ml Water

Baking pan (I used a silicone sheet in case it stuck to the pan)


Get your sugar and water in a large saucepan and bring to the boil. Reduce the heat and keep a really close eye on the mixture. You’ll see the edges turn slightly gold and as soon as that happens pour the liquid onto your baking pan. I found the layer I made was quite thick and therefore looked less like glass so try spread it as thinly as possible. Let it cool completely and then break up the caramel by twisting the sides of the pan. Then get artsy…
